Ingredients
Hainanese Chicken
- 1 whole chicken
- 2 stalks green onions cut 2 inches long
- 1 shallot roughly minced
- 5-6 cloves garlic roughly minced
- 2 TBSP ginger sliced
- 6 cup unsalted chicken stock or water
- 1 TBSP salt
- 1 TBSP oil
Rice
- 2 cup jasmine rice
- 2 cup chicken stock from pot of chicken
- 1 TBSP oil
- 2 cloves garlic minced
Hainanese Chicken Soup
- Remaining chicken stock
- Lettuce or cabbage
Hainanese Chicken Ginger Sauce
- 1 stalk green onion, chopped
- 1 TBSP ginger, grated
- 2 TBSP seasame oil
- salt to taste
Instructions
Hainanese Chicken
- Heat up Instant Pot on Sauté mode until it indicated HOT.
- Add oil and saute green onions, shallot, ginger, garlic for 2 minutes.
- Add 6 cups of unsalted chicken stock or water and deglaze the bottom with a wooden spoon.
- Add in 1 TBSP salt and mix well.
- Add the chicken to the Instant Pot. Close lid and cook at High Pressure for 10 minutes + Full Natural Release (10 – 15 mins).
- Firm up chicken skin: Open the lid and carefully remove the chicken with kitchen tongs. Plunge the chicken an ice bath or run under cold tap water. Place on a plate to firm up the chicken skin.
- Strain the chicken stock to filter out the solid ingredients (save 2 cups of stock and solid ingredients for rice).
Hainanese Soup
- Skim extra fat from soup.
- Cook vegetables in stock.
Hainanese Rice
- Heat up your Instant Pot on Sauté Mode.
- Add 1 tbsp oil, then sauté 2 cloves of minced garlic.
- Add 2 cups of prewashed jasmine rice, then immediately add 2 cup of chicken stock.
- Add filtered solid ingredients to rice for extra flavor.
- Close lid and cook at High Pressure for 3 minutes + Full Natural Release (10 mins).
Hainanese Chicken Ginger Sauce
- Place the freshly grated ginger and green onions in a small bowl.
- Pour in 2 tbsp HOT peanut oil.
- Add salt to taste (½ tsp).
