Soba Sauce

A warmed homemade Japanese dipping sauce eaten with cold buckwheat soba noodles. Leftover sauce can be stored in the fridge for 1 week or 3 months in the freezer.

Ingredients

Soba Sauce

  • 1/2 Cup dashi or stock
  • 2 TBSP soy sauce
  • 2 Tsp honey
  • 1 Tsp cold water
  • 1 TBSP ginger, minced
  • wasabi (optional)
  • 2 stalk green onions

Soba (buckwheat noodles)

  • 2 bundles feeds 4 people

Instructions

Sauce

  • Mince ginger
  • Mix all ingredient to a bowl. Warm sauce when ready to serve in a pot or microwave. Add green onions.

Soba Noodles

  • Boil 1 litre of water to cook one bundle of Soba Buckwheat Noodles. Cook for 6 minutes.
  • Prepare an ice bath. Place cooked noodles immediately in ice bath. Serve
